It’s my favourite time of year – show time!
I’ll be in Sydney 25-27 May for Food & Hospitality Week, which includes the Restaurant & Foodservice Show, Cafe & Coffee Show, Pizza Pasta & Italian Food Show and RESTECH: Hospitality Technology Show.
I’m thrilled to be hosting the first three sessions on the RESTECH Stage, kicking off the three-day program for anyone who needs to keep on top of new tech developments to improve their business. (Isn’t that everyone?)
I’m especially keen to hear the opening session by Food Industry Foresight‘s Rod Fowler on ‘The Future of Tech in Food’. Next up is a panel session facilitated by Andrew Briese from CTB & Co discussing the tech stack that hospitality operators need right now. I’m also looking forward to the third session with chef Julian Cincotta, owner of Butter Sydney, on tech that makes his business run better.
On Monday afternoon I’m assisting chef Nik Hill with his Bocuse d’Or Australia masterclass. He’ll be on the Chef’s Table stage with Tawnya Bahr from Straight to the Source, demonstrating how to transform a whole duck into a ballotine – a dish that happened to win him the Golden Knife contest last year.
Tuesday morning I’ll be at the breakfast hosted by AFAB and ARCA, which promises to be an interesting discussion on the challenges facing the industry right now.
The next two days of the show I’m dedicating to connecting, learning, watching the culinary competitions, and checking out the latest systems, products and equipment for the hospitality industry.
The Chef of the Year contest is always a highlight of this show. A shout out to my buddy Glenn Flood, who always does an amazing job as MC, and head judge John McFadden, who is heading up a stellar team including Markus Werner, Jamie Gannon, Simon Sandall, Claire Van Vuuren, Amanda Fuller, and Chris Jordan. Good luck to all the competitors, I can’t wait to see you in action!
Another event to look forward to is the Australian Pizza Championships, MC’d by the exuberant Nicholas Kalogeropoulos and judged by Head Judge Johnny Di Francesco and his team. As always it’s hard to be everywhere at once to see the rest of the competitions, Australia’s Best Burger, Battle of the Butchers, and Emerging Pâtissier of the Year, as well as the many demonstration and education stages.
Most importantly there will be more than 400 exhibitors filling the halls at ICC Sydney, and I find it’s crucial to make time to walk every aisle to see all the products on show.
